80/20 Venison to Pork ratio

Ground through a medium plate, mixed with beer and seasoning/cure before running mix through the smallest grinder plate I have.

I used a Leggs seasoning kit this time, but added some jalapeño powder, an SPG bbq rub, and more garlic.

Smoked to 150°

    Thought this group was knowledgeable enough to understand how this is marketed as a restructured “bacon” product. It’s just what it is called and every deer processor will market it and call it as such. I guess I was wrong…

    I make my own pork belly bacon frequently. I’m well aware of what bacon is.

    It’s a Scrapple. The mid-Atlantic coast is quite familiar. Fry it crispy & use a good mustard or a hot sauce.

    I’ve heard people call this bacon before, and like, I mean, yeah the middle does look more like summer sausage, but you can’t get it to look like actual bacon at home.

    If no one else here would eat it, I can proudly say I’d eat it on a biscuit with some hot sauce and honey

    Buck bacon should definitely have a different call sign, it’s not from the belly it’s more of a deer loaf and it’s never cured except for the msg thrown in.

    Venison bacon is really good. You can be offended by the name but you are missing out if you don’t ever try it. It’s similar to frying up slices of summer sausage but with some different seasonings.

    Does it get crispy when you fry it? Or eat it as is? Looks pretty good, though as others say Mayhaps it’s more of a meatloaf than officially “bacon” but hey I don’t make the rules nor do I enforce them
