  7. 1 package phyllo, room temp
    1 lb chopped fresh baby spinach
    1 heaping TBSP Dill
    1/2 tsp black pepper
    About 6 Scallions, thinly sliced
    15 oz Ricotta cheese (or cottage cheese)
    1 LB Feta, freshly crumbled
    3 eggs
    1/4 olive oil
    18 x 13 x 1 baking tray
    Preheat oven to 450 degrees Fahrenheit
    Mix Ricotta, eggs, dill, black pepper, olive oil
    Then add in chopped spinach and scallions
    Add the feta

    use either melted butter or extra virgin olive oil
    Grease the pan with oil or butter
    Layer one sleeve of the phyllo dough and drizzle with butter or oil as you layer
    Add the spinach mixture
    Fold over the phyllo and then crinkle pieces of phyllo and add to the top…press down a bit and drizzle with lots of butter or oil
    I recommend preslicing the top of the spanakopita before baking
    Put in the preheated oven but immediately turn temp down to 350 degrees and bake for one hour
    Let me know how you like it!
