Get ready to have your mind blown with these delicious smoked meatball subs! In this video, we’ll show you how to make tender and flavorful smoked meatballs on a Weber kettle grill. If you’re looking for a new twist on a classic sub sandwich, this recipe is a must-try!
These #smokedmeatball subs were inspired by @ChudsBbq and they came out AMAZING! We used veal instead of pork for our mixture (#recipe below) and really loved the pancetta #bacon in the sauce!

MEATBALL RECIPE
2.5 lbs – 80/20 Ground Chuck
1 lbs. – Ground Veal
1 bunch – Parsley
6 cloves – Garlic
1/2 cup – Panko Crumbs
1/4 cup – Beef Stock
14 cup – Buttermilk
2 whole eggs
3 egg yolks
1/4 cup – Parmesan Cheese
Chili Flakes – To Taste
1/2 Teaspoon – Oregano
1 Teaspoon – Fennell
Salt and Pepper – To Taste
SAUCE RECIPE
1.5 lb. Pancetta
1/2 – Onion
4 cloves – Garlic
2 cans – Crushed Tomatoes
Basil – Optional
*Mix all meatball ingredients and form into golf sized balls.
*Place on wire rack and onto the COOLER side of the grill/smoker
*Cook until they reach an internal temp of 155°
*While the meatballs are cooking, cook down the pancetta, onion and garlic in a large sauce pan
*Add the can of tomatoes and allow it to simmer
*Add meatballs to the sauce and stir
*Add to your favorite hoagie roll, top with mozzarella and provolone cheese, place back on the grill until cheese is melted
