My god this was good!!! Chuck roast was on sale so I figured there had to be a way to make an epic pot roast on the egg. Seasoned the roast with some kinders pepper garlic salt and Traeger chili garlic seasonings. Smoked the roast over the top of a pot of beef broth, chopped onion, baby carrots, a couple bell peppers, hand full of pepperoncinis and some juice from the jar, and some miscellaneous herbs and spices. After a couple hours of smoking around 250-300. I plopped the roast down into the pot once it reached 150 degrees and kept it going for a few more hours. Added some potatoes at some point. Pulled it from the egg when the roast was at 200, then moved to the stove top after kind of breaking the roast up into chunks. Kept it going little longer with the lid on to get the meat to really start falling apart. Delicious and so cheap and easy!!!
