Y’all wore me out with requests for this recipe, and I love that for all of us! This highly requested Holiday Twerky dish is finally here, and I couldn’t be more excited to share it with you. It’s packed with flavor, and we’re not cutting any corners!

As always, don’t forget your ancestor measurements—these are just a guide! Now, let me introduce you to the best vegan turkey roast (aka Twerky) there is!
For the Roast
• 2 ½ – 3 cups vital wheat gluten flour
• 1 can blended navy beans
• 1 tsp poultry seasoning
• 2 tbsp Chef Joya’s Lickin Chikn seasoning
• 1 cup vegetable broth (or water)
• 1 tbsp vegan Worcestershire or tamari
• 3 tbsp neutral oil
• ½ tsp liquid smoke
Instructions: Mix the dough for about 5 minutes and let it rest for 10 minutes. While it rests, sauté your mirepoix.
Mirepoix
• 1 cup mirepoix
• 1 tbsp Chef Joya’s Lickin Chikn seasoning
• 2 tbsp vegan butter
6oz chopped mushrooms
Sauté for 5 minutes.
Marinade Butter & Rub
• 8 oz creamy oat butter
• 3 tbsp Chef Joya’s Red House Seasoning
• 1 tsp vegan Worcestershire
Use:
• Half of the creamy butter mixture to rub on the Twerky.
• Melt the other half for injecting into the Twerky.
Twerky Crispy Skin
• 1 large bean curd sheet (thawed or fresh)
• 2 tbsp vegan Worcestershire
• 1 tbsp Red House seasoning
• 1-2 tbsp olive oil
Rub the mixture all over the bean curd skin, inside and out.
Roasted Veggies
• 1 lb small red potatoes
• 3 stalks celery, chopped
• 1 orange bell pepper, chopped
• 1 sweet onion, sliced or chunked
• 1 ½ tbsp Chef Joya’s She’s Zesty Seasoning
• 1 tsp vegetable bouillon
• 1 tbsp olive oil
• 1 tbsp water
Key Cooking Notes:
• After steaming your Twerky, let it rest for an hour if possible (or skip this step if you’re short on time).
• Preheat your oven to 375°F.
• First Roast: Apply the soft butter mixture, tent with foil, and cook for 30 minutes. Inject with the melted butter mixture and cook for another 10 minutes.
• Second Roast (with skin): Wrap the Twerky in the bean curd skin and roast uncovered for 20 minutes, or until crispy to your liking.
