Pulled a handful of sauces from what may be a traditional go to and a few alternatives. Which did I pick? I went with these in picture 2 for a comparison. Tabasco and Crystal were obviously vinegar forward and cut through and brightened up the fatty pork flavor where the El Yucateco was straight up in your face. Overall, I like the southern vinegar style for this application. I split up the Tabasco, Crystal and both green and red El Yucateco. A dash of paprika for looks for my mother who would use it to garnish boring brown colored food.

    For some reason I prefer Tabascos on Biscuts and Gravy, probably nostalgia.
