This is a Spanish dish using fideua noodles and is similar to paella. This dish starts with a 2hr sofrito of deeply caramelized onions, garlic, and tomatoes, a toasting of the fideuás in the sofrito infused olive oil, homemade seafood broth, shrimp and scallops, garnished with lemon allioli and chives.
The fideuás curl and stand “erect” when done and have a similar cook time with the chosen seafood so that everything finishes together. Buen provecho!
