Had some baby bella mushrooms already, chopped up just under a cup of them and cooked them w 1 tbsp of olive oil and S&P. Then added the full pack of the cauliflower risotto to the pan, used Adobo and lemon pepper while cooking. When it was done, added a tbsp of grated pecorino romano and it was 🔥 ate the whole thing and felt satisfied! It was easy and delicious for under 300 cals, the lemon pepper was key really gave it that nice kick
(I had a yogurt snack later, but imo would pair nicely w grilled chicken/fish for more protein)
