This was a staple growing up. Not a budget meal back then and was more of just a family favorite in the rotation, but I was doing the math when I made it last night and realized it is cheaper per serving than lots of other meals I make. Full disclosure, not the healthiest as it is carb and sodium heavy, but could be made healthier if you make some items from scratch and use an alternative seasoning not from the wild rice box. About $10 for 12 servings just the casserole, $12 total when adding in sides. If you don’t add in sides more likely to have 9 or 10 servings total. I live in a MCOL area.

3 cups shredded chicken $2.50
Uncle Ben’s Wild Rice $2.50
White Rice $.25
2 stalks celery $.25
2 TBS butter $.50
Cream of Chicken $1
Cream of Celery $1
Cream of Mushroom $1
Broccoli $1.50
Rolls $1.00

I stockpile cream soups and boxes of the Uncle Ben’s when I can get it on sale, always buy chicken on sale and freeze for meals like this. Cook it in the instant pot so from frozen and perfect.

    Sauté celery, white rice, wild rice and wild rice seasoning mix with butter. With heat off, Add in cream soups and 2.5 cans of water. Mix the rice mix with cooked shredded chicken. Add to casserole dish and bake. 350 covered for 45-50 minutes, 15-20 minutes uncovered. Needs to be covered to cook the rice.

    I love casseroles so much. I grew up on one like this, but with bigger chicken chunks and broccoli added. I need to teach my kids to tolerate casseroles.
