1.) Polish Potato Dumplings with Creamy Beet Purée and Roasted Fennel
2.) Buckwheat Soba in a Sesame Miso Sauce with Roasted Rainbow Cauliflower and Edamame
3.) Chickpea Pot Pie
4.) White Bean, Mushroom, and Corn Enchiladas
5.) Nora Cooks Vegan Pistachio Cake
6.) Couscous and Beans with Delicata Squash
7.) Lentil Loaf with Potatoes, Green Beans, and Mushroom Gravy
8.) Veganized Von Diaz Arroz con “Pollo” – this was one of my all time favorite recipes before I became vegan. Still working out the kinks to make it a top 5 again!
