Purchased two bottom blade beef roasts from Costco for a decent price and figured I'd try smoking one of them brisket style.

Usually these just go in the crock pot and turn out to be an awesome stew but I wanted to see what happens.

I just used salt+pepper and a prime rib rub with no binder.

Smoked low and slow for 8 hours starting at 180°f for 1.5 hours to really beat the smoke flavor into the meat. 4 hrs at 225 until 165°f internal and pulled it to wrap. Remaining time I went 250°f and pulled it off at 198°f internal. Wrapped it tight in aluminium foil and tossed it in the cooler to rest for 1 hour or so.
