I make something similar called “poor man’s meal” it’s from the Great Depression and consists of chopped potatoes and onions and hotdogs (I usually use sausage or bacon) tossed in some oil and seasoning and friend or baked until done.
Cant ever go wrong with baked, roasted, or fried potatoes.

I was broke and my mom bought me a bag of red potatoes. Made so many meals, I also had a couple different spices cuz I worked at a restaurant so no hate to this meal at all. Honestly I still eat these lol

A tasty and cost effective potato dish you should try is roasted garlic mashed potatoes. Just need some yellow flesh potatoes and roasted garlic, though obviously better with butter

I really recommend Julia Pacheco’s channel on YouTube. She has 100s of easy, budget friendly, and delicious recipes on her channel with easy instructions for all types of cooking… stove top, crock pot, oven. She gives alternate ingredients for some items you may not have in stock or care for. Here are a couple of samples. Also, try your local food pantry for staples to keep on hand. This time of year they get lots of food donations. Good luck.

People really sleep on tofu. Is a cheap ass protein and it’s really good if you cook it right. I’m not vegetarian or anything but I eat it a lot. Just press it, chop it into squares and toss it in seasoning and air fry/ bake it and it’s bomb. 1 block of tofu is like $1 and it’s enough for 2 meals.
But also, those potatoes look bomb. Good job.
