Does anyone have a muffin recipe that tastes similar to the Abe’s muffins?
I'm looking to recreate these at home because they are a bit expensive for me and they're one of my faves. But I can't seem to get the muffins to be light and fluffy like Abe's.

Erin McKenna’s “Babycakes” cookbook may have a similar recipe. She bakes gluten free, but does a good job with that constraint. I think almost all her recipes would work just substituting all purpose wheat flour for her more exotic flours.

I made the Krusteaz wild blueberry muffin mix last week with flax egg and it reminded me of these.
