Shittake mushroom adobo with garlic green beans and sticky rice

I made this for dinner today in honor of my father in law, who passed away four years ago today. He taught me how to make authentic Filipino chicken adobo decades ago, before my husband and I became vegans, and even though mushrooms are not authentic to the original recipe, I believe he would approve.
