Having learnt this from my son, I would never cook risotto any other way. This IP Mushroom Risotto recipe is from my son and as a very proud mother, I must say it’s a keeper ! Made with perfectly cooked Arborio rice, earthy mushrooms, soy, and miso, this dish is umami-packed, flavourful, and entirely satisfying.
Serves: 2-4 pax
Ingredients:
15 grams dry porcini mushrooms; washed n soaked, drained n sliced
500 gm vegetable broth
300-350 grams mushrooms(mixed kinds is fine); sliced thin
2 tbsp olive oil
1 1/2 tbsp butter
1/4 tsp pepper
salt to taste
1 medium onion; finely chopped
1 pod garlic; grated
1/2 cup arborio rice
1 tbsp miso paste
1 tsp soy sauce
1/4 + 1/8 cup dry white wine
1/4 cup cream
1 tbsp parmigiano-reggiano
handful tarragon ;finely chopped
Handful flat leaf parsley; finely chopped
Handful chives; finely chopped
Parmigian-reggiano for serving
