This is likely nothing to worry about. When tuna is cut against the grain the cut ends of the muscle fibers can reflect light and create that iridescent effect! Tuna is not alone, either, this same rainbow shine can often show up on deli meat for the same reason.

I’m pretty sure that happens to any meat that’s cut a certain way. Happens with deli ham and turkey. [Here’s a cool article](https://www.americastestkitchen.com/cooksillustrated/articles/7705-what-causes-beef-rainbows) about it!
When I butcher yellowfin right after I catch them it’s VERY visible.

When you really get into tuna heavy, try **Natural Catch** filets in water (albacore) or (yellowfin) in EVOO. Primo. A bit pricey, but oh so good.
