Black bean puree topped with Trader Joe’s spicy Mexican cauliflower rice and diced sriracha baked tofu (also TJs) and a poached egg. Garnished with a little crema and salsa. Sooo good
Bonus, Clocking in with 40 grams of protein to start the day and Half my daily goals for fiber and iron too!

Only spent 50 calories on lunch (bone broth) so I’m ready for my splurge on dinner (panang curry chicken with jasmine rice)!

    That cauliflower rice is the love of my life. It has so much flavor and texture that when I eat it, I don’t even miss regular rice
