It finally clicked that I’m on a journey. The latest stop is always the best. Some loaves are good and some are not. It hit me today when I was opening up the oven after my Dutch oven was ready to go … I was so excited to drop my dough ball into the oven. It might be my favorite part, but then it got me thinking even further about the journey from beginning the starter. To the small journeys we take every time we bake. It’s such a process. For me it’s a 48 hour process. I love every stage. It’s so simple but so hard to master. People come on here and show us the nicest aesthetic we’ve ever seen and others come on here and show us a brick, but we all are on the journey together.

500 g flour
380 g water
1 hour autoLyse
100 g starter
12 g salt
Combine it all and mix together by hand
Wait 30. Stretch and fold. Repeat / more times and 30 min intervals. Go to sleep. 12:00 am
Shape and into banneton after 14 hour bulk rise it’s COLD AS F!!
Into fridge for 8 hours
Preheat Dutch oven to 500 for an hour
Bake covered at 500 for 20
Bake uncovered at 400 for 25
That’s how I like it. Open enough, but still functional for sandwiches. Very nice.
