Wanted to have carbonara but didn't have eggs.

Zucchini cream goes really well with guanciale, but personally I didn't think it pairs well with spaghetti. Specifically, I didn't really enjoy the zucchini's vege flavor. If the cream was thicker, fattier, and stronger like pesto it would work better with pasta, but then the harmony with guanciale would be compromised.

It still tasted okay but now I see how balanced carbonara is!! Egg works well for both guanciale and pasta, binds them together.
