Got a new kitchen manager position, this is how I found a fridge after taking everything out. Took two and half hours of scrubbing and it’s not perfect yet

    Yep, I have seen the same and worse, inherited problems are brutal, now it’s on you to establish a system so it doesn’t end up like that again. Regular full station wipedown even once a week should suffice, good luck 👍

  3. It was awful, I have a bunch of cleaning and more to do here but firstly I need to drill in to the staff heads that they need to care for this stuff.

    I had similar if not the same coolers, with similar excuses from staff as to why it was so grodie. I timed myself and it takes 12 minutes to gut, scrub, and squeegee those coolers. Closing checklist and a nightly inspection fixed the issue thereafter

    I once took a job at a dive bar with a one-person kitchen and I took the drawers out of the unit… I brought over a hotel pan and started wiping out months worth of liquid, pink slime, hamburgers, plastic wrap and black slime.

    I was proud of myself for tackling such a mess.

    Then I put in my notice.

    As a retired chef/manager, I applaud you coming in and setting the tone and standards. My rule of thumb was always, I’ll HELP you guys clean this to standard and you’re responsible for maintaining. Elbows in with your team is great and critical bonding and ample time for teachable moments

  13. Anytime I took over a kitchen, first thing I would do is host a mandatory cleaning party.

    Then I would explain to my crew this is how I expect things to look at the end of your shift.

    As a manager, I would help clean and get dirty along with my crew as well.

  14. Congrats on the job! That first clean should be to set the standard…from here on out the team should be doing that cleaning! As a former kitchen manager who ended up doing the majority of the deep cleaning, take it from me that the expectation should be that your job is to teach, manage, help, and supervise, NOT to come in and just do the pieces of everyone’s jobs that they are choosing not to do!
