There’s NOTHING like #couscous made from scratch. Not saying anything is wrong with the boxed kind… it’s just different, and I personally prefer it #homemade 🙂 And while I admit that it takes a bit more effort than my usual recipes, it’s total worth it!! Ingredients:
– 1 Kilo Semolina Flour
– 2 cups of water, total
– 2 tsp Turmeric
– Salt to taste (about 1-2 tbsp)
– 1/3 – 1/2 Cups of Oil (recommended: Avocado Oil, or Grassfed Butter)

You will need:
– Steaming Pot (featured: @All-Clad)
– Couscous Sieve

Method:

First Steam:
– Simply add about half a cup of water a tiny little bit at a time into the semolina flour until the flour is grainy
– Sift the flour through the couscous sieve
– Grease the steamer pot and add in the flour
– Steam for 20 minutes
– NOTE: Half way through steaming, give the flour a toss to ensure the holes of the steamer pot are not clogged so that the steam can properly enter the pot

Second Steam:
– Start by adding in turmeric and salt, and give it a good mix
– Add in the rest of your water a bit at a time, mix in between the times you add in the water
– Add in your oil last
– Optional: You can sift the entire couscous again through the sieve or just sift any pieces of couscous that are stuck together
– Add back into a greased steamer pot and steam for 30 minutes, giving the couscous a toss halfway through the steaming process

Add your couscous into a big bowl and cover with a clean cotton tea towel.

Serve with anything saucy or brothy like soup, moroccan fish, sour cream, chopped #salad… so many options!!! It’s so sooo good. #yummy!!!!
