Vegan Stuffed Mushrooms
Ingredients
24 – 26 cremini or baby Bella mushrooms, cleaned and stems removed
2 cloves of garlic, minced
1/2 cup lightly salted breadcrumbs
1/2 cup grated vegan Parmesan
1/3 cup olive oil
2-3 tablespoons fresh herbs (I used oregano and thyme)
Directions
Add the garlic, herbs, breadcrumbs, Parmesan and olive oil to a bowl and stir to combine. Fill the mushroom caps with the filling and place the mushrooms on a parchment lined baking sheet. Bake in a 400F oven for 25 minutes or until tops are golden brown. Serve warm.
