What causes the lids to look flat instead of having a nice dimple? I pressure canned 11 quarts following the std procedure..1 1/4 headspace and process time of 90 minutes. I heard several lids ping after removing from pressure cooker, but all 11 lids look flat , or perhaps the slightest dimple i’ve ever seen. The meat seems to have shrunk quiet a bit and there is probably near 2” headspace now. I tested each one by lifting jar by the lid and also the spoon tapping test. Are these safe? Advice?
