I haven’t used that particular flour from Costco but every brand that I have used baked just fine.

It may have a different color and more robust flavor (excellent for feeding a starter) but over all I found that it isn’t much different from any other flour.

It’s got a little less protein than KA AP, but I don’t notice it for the baked things I use it for.

I’ve used the Organic Costco flour and it’s great. This brand looks different but my local Costco is a trial store. We always have new items that come and go but organic flour has seemed to have stayed.

Might be fine for most breads, but it’s not enough protein content for sourdough. You’d want between 12.5-14%.

I haven’t seen that in our Costco but I believe 11.5% protein is same as King Aurthur so I’d try it. You can always return if you don’t like it.

I’ve been using this as my supply of AP flour for probably years now with everything that I bake and I’ve never had an issue with it. Just don’t use this if the recipe calls for bread flour specifically.
