Had my small sweet potato harvest in a bin over my seed mat with my grow lights going to get the temp up enough. Had the bin completely covered with black tarp. Temp and humidity were spot on for a warm cure but every sing one of them sprouted.
They are now house plants for the winter…
But how can I avoid this next year?

I usually cure mine in a plastic bag in a sunny window for a week. Then I let them dry a day and then wrap individually in newspaper and put in a box to store.
Unlike potatoes they don’t go bad when sprouted. Just pop off the slips and store them until it’s time to make slips for planting.
When I last harvested, I stored them in paper bags in my barn/shed. I’m in swfl, so my parameters might be different. The paper bags regulate the moisture and keep it dark. I stored this in a shady spot as well. Two weeks later good to go.
From my understanding they need to breathe so a plastic bin with a plastic tarp might have kept them too moist. I do a milk crate with paper bags covering them
