Our thing right now is doing a whole pack of Costco steaks in the sous vide at once, then figuring out what to do with them in a household of two over the next week. Steak sandwiches have been a hit.

  1. Steaks were I think sirloin, but honestly did not pay much attention beyond searching through for a pack on the smaller side.

    They did 3ish hrs in the bath at 133, but that includes the time to come up to temp. In the bag with them is a mix of the items in the second pic plus a little olive oil. The pickle sauce adds a little acid and a strong dill flavor, and we’re very into it.

    After they’re done in the sous vide I drain off the juice and stick them right into the fridge.

    Whenever we want steak we then just fry them in avocado oil after we pull them from the fridge.

    Sandwich is a toasted bread roll, havarti cheese, more chimichurri sauce, Mayo, pimiento peppers, some pumpkin seeds for a little crunch, and obviously steak. The Costco packs tend to have a couple baby steaks in there that are good single sandwich size (provided you are okay with a few snack pieces of steak on the side).

    We’ve felt very decadent frying off steaks repeatedly while it’s so cold out.
