Rotisserie pork roast

    I rubbed this pork roast with fennel seed, black pepper, rosemary, thyme, sage, garlic, fennel fronds, salt, and olive oil. I sliced up a pork shoulder and wrapped a pork belly around it.

    I cooked it on a rotisserie in my charcoal kamado grill. 300 – 325 for 6 ish hours to an internal temp of 180. It was amazing! The belly was a little crispy on the outside and tender on the inside. The interior pork shoulder was perfectly roasted.
