    **Sugar Free Sweet Jalapenos Cowboy Candy**

    Spicy, sweet, low carb and sugar free, ticks all the boxes for me. Super easy to whip up a batch and have on hand for burgers, pizza and everything Mexican. Sugar free cowboy candy in 10 minutes.

    Makes just under a litter including liquid.

    **Ingredients:**

    1 pound fresh jalapenos

    2 cloves garlic, peeled

    ¾ cup apple cider vinegar

    2 cups allulose

    ½ tsp. Kosher salt

    1 liter mason jar/lid, sterilized

    **Directions:**

    Stem and seed jalapenos.

    Cut the jalapenos into ¼” rings.

    Add cider vinegar, allulose and salt to a saucepan.

    Bring to a boil, reduce heat and simmer for 5 minutes.

    Stir in jalapenos and garlic.

    Simmer for 5 minutes to semi cook and thicken.

    Pack the jalapenos into sterilized jars

    Bring the syrup mixture to a boil.

    Ladle the hot mixture over the jalapenos.

    Fill to about a ½” from the top.

    Wipe the rim and seal with the lid.

    Store in the fridge when cool.

    **Notes:**

    To remove the seeds, I cut off the stem end and stir the seeds out with a thin metal skewer and tap the open end to help them fall out.

    Erythritol is a good substitute for allulose.
