    Perfect for wagyu. Personally, I prefer wagyu more done than regular beef.

    So here’s the thing, and a big reason why I don’t get the over/under fetish. THIS is perfect because of the apparent fat throughout the cut. Would I cook an Olympic-athlete-cow filet like this? No! Id eat it damn near room temp. Nuance is where the good shit is. This is a good call for this cut.

    The cut really determines how I prefer a steak to be cooked. The rendering of fat is paramount, lean cuts rarer; fatties cooked longer. This looks like a good balance to me. 100% would chomp.
