My Hokubee ribeye steak. Anything that I can improve?

  1. Sear looks fine, steak looks medium. The steak looks pretty thin so it’ll be difficult to get a hard sear with a low internal temperature. Try thicker next time and reverse sear it to ~15 degrees under your desired temperature. Then hit it with a high cast iron sear until the exterior is to your liking.
