Low Carb Tortilla Smash Burgers

    Finely slice a yellow onion and caramelize over medium-low heat in an olive oil/butter mixture.

    Put some mayo or special sauce on a low carb tortilla and set aside.

    Once onions are done move to a low burner to keep warm.

    Heat a pan to medium-high heat with some avocado oil. Smash 2.5-3.5oz high fat (20%+) burgers into the pan about as flat as you can get them (helps if you have a burger smasher). Mine ended up about 1/8″ thick. Sear until you have a deep brown on the first side. Season with salt and pepper and then flip. Immidiately cover with a slice of cheese and cover pan to melt.

    As soon as cheese is melted place in tortilla and repeat for however many patties you’re cooking. Top with onions and other cold toppings.

    Fold in half into something akin to a quesadilla and enjoy!

    I agree, looks very tasty! And clever idea to make into thin smashburger and use a LC tortilla. Easy to handle that way.
