Sweet & Salty Pretzel Bites

    **Ingredients (Imperial / Metric Weights)**

    *The Dough*

    * 1 tsp ( 1/2packet) – 4g Dry active yeast
    * 1/2 tbsp – 8g Brown Sugar ( packed )
    * 3/4cup -170ml Warm Water ( 110F )
    * 1/2sp – 3g Salt
    * 1tbsp – 15g Butter ( Melted)
    * 2cups – 240g Flour

    *Egg wash*

    * 1 unit – 50g Egg
    * 2tsp – 10ml Water

    *The Bath*

    * 3cups – 680ml Water
    * 1/4cup – 70g Baking soda

    *Topping*

    * 2tbsp – 30g Butter (Melted)
    * 3tbsp – 35g turbinado sugar (or regular)
    * 1/2 tsp – 2g salt

    **Instructions**

    *Preparation*

    1. Accurate measuring of ingredients
    2. Using the correct tools and equipment

    *The Dough*

    1. Add the yeast to the water and let it activate for 3 minutes
    2. In your stand mixer fitted with the hook add the flour, the sugar, the salt and the yeasted water.
    3. Start mixing so all the ingredients come together
    4. Knead for 5 minutes or until the dough doesn’t stick to the sides anymore
    5. Place the dough inside an oiled bowl.
    6. Cover & let it rise for 45minutes in a humid and warm place

    *The Bites*

    1.When the dough has doubled in size separate it in 3 pieces

    2. Roll each piece into 20-22inch

    3. Cut each piece into 20 bites sized pretzel dough

    *The Bath & The Baking*

    1. Mix water and baking soda in a large bowl.
    2. Add 20 dough pieces at a time to the bowl and let them sit in the water for about 30 seconds.
    3. Take the dough pieces out of the water and place them on a baking tray.
    4. Preheat your oven to 420F.
    5. In a small bowl, mix the egg and water to create an egg wash.
    6. Brush the egg wash onto each dough piece.
    7. Bake the dough pieces in the preheated oven for 12-15 minutes or until they turn golden brown.

    *The Coating*

    1. Mix sugar and salt
    2. Melt some butter in a separate bowl and Brush it over your bites
    3. Sprinkle your sugar mix!

    **Here are some tips for making sugar pretzels:**

    1: Use instant yeast: Instant yeast doesn’t need to be activated in warm water, so you can simply mix it with the flour and other ingredients. It also rises more quickly than active dry yeast.

    2: Use baking soda in warm or even boiling water: Pretzel bites in water with baking soda is what gives them their distinctive flavor and texture. The baking soda causes a chemical reaction that creates a crispy crust on the outside of the pretzels.

    3. Use parchment paper: Use parchment paper to line your baking sheet to prevent the pretzel bites from sticking.

    4. Brush with butter: Once the pretzel bites are baked, brush them with melted butter and roll them in sugar. This will give them a delicious sweet and salty flavor.
