7oz / 200 grams Chinese broccoli (cut stems in thin slices, cut leaves in big pieces)
1 onion (cut in medium pieces)
2 eggs
18oz / 500 grams fresh wide rice noodles
3 cloves garlic (chopped)
**Instructions:**
In a large bowl, mix the fresh rice noodles with dark soy sauce. I use my hand, with a plastic glove for hygiene, so I can ensure that all the noodles are well coated with soy sauce.
Heat 1 tablespoon cooking oil in a non-stick wok pan or skillet over medium to high heat.
Add garlic, cook for a quick 10 seconds, and add slices of beef. Stir-fry until the beef is halfway to being cooked through.
Push everything to one side of the pan, and crack the eggs into the other half.
Gently scramble the eggs and then mix them with the beef.
Add the noodles and mix with the rest for 1 minute.
Add in all flavoring (oyster sauce, white sugar, flavor seasoning, white pepper, vinegar) and toss to mix until flavoring ingredients are dissolved.
Add Chinese broccoli and onions and stir-fry until the vegetables reach the desired texture of your preference (soft or crunchy). I like the broccoli stems to still have some crunch to them, so I usually don’t stir-fry for longer than 1 minute.
