Tare based on salt, niboshi and smoked pear. Chicken with duck chintan. Ginger-lemon oil plus shallot oil on fat from broth. Topped with SV chicken, egg, chives, menma, lemon and freshly ground Sichuan pepper. Homemade yellow noodles on Nisshin flour 🖖👌.
