Cottage Cheese Mug Cake (4g carbs + 16g protein)

    Just thought I’d share the cottage cheese mug cake I make every morning. Been trying to recomp (hence the decent 16g protein) and I love ending my breakfast with this!

    **Ingredients**
    * 2 tbsp butter
    * 3 tbsp cottage cheese (I use Good Culture)
    * 1 tsp vanilla extract
    * 1 egg
    * 1/2 tsp baking powder
    * 1.5 – 2 tbsp sweetener (or sweeten to taste!)
    * 3 tbsp almond flour

    **Instructions**

    1. In a small bowl combine the butter and cottage cheese. Melt them in the microwave to help break the curds of cottage cheese. Stir until smooth.
    2. Add the vanilla extract and egg. Whisk everything up
    3. Add your baking powder, sweetener, and almond flour. Stir until everything’s all incorporated.
    4. Pour mixture into a ramekin (or a mug) and put into your microwave. For me, it takes about 3.5 min but obviously this varies by microwave.
    5. Enjoy! I like topping mine with some whip cream.
