My local grocery store often has BOGO sales on kielbasa so I always buy a few packs to keep in the fridge. I got this jambalaya mix from Aldi for the first time this week, added in the kielbasa and some fresh veggies for an easy, filling, frugal and veg-packed meal! Made about 3 adult servings.

Who else has tried this jambalaya mix? What are you favorite add ins?

    Recipe:
    1 box jambalaya rice from Aldi
    1 package kielbasa
    1 red bell pepper
    1 yellow onion
    1 handful spinach

    In a skillet, sauté the bell pepper and onion in oil, season with s&p. Add the rice mix and sauté briefly. Add water and follow the box instructions to cook. When rice is done, add in the kielbasa and spinach. Cover for a few minutes until sausage is warmed and spinach wilts. Enjoy!

    That is one of my go-to pantry meals! I usually use 2 boxes so we can eat it for the week. I’ll add in peppers, onions, canned diced tomato, canned corn, canned beans, kielbasa, whatever I have really but I usually plan on the ingredients listed. Pickled jalepenos, cheddar cheese are some other ideas for add ins.
