One package of firm tofu, very quickly pressed. Crumble to desired curd size.
One individual dairy free unsweetened yogurt of choice.
1 tablespoon of lemon juice.
1 tsp of granulated garlic.
Mix and use.
Cottage cheese is my most missed food and I am so happy to have a much more wfpb version.

I forgot to add up to one teaspoon salt. I added about 3/4 tsp of salt. Since salt is in my everything but the bagel seasoning, I think I will omit it next time.
I have been wishing vegan cottage cheese was a thing so bad. Now you have the wheels spinning. Tofu duh!! Smart!!
