I thought it was generally accepted that you should let beans rest and offgas for a few days after roasting for optimal flavor. Did this change?

I don’t think that’s necessarily true. Very light coffee will lose enough gas to significantly bubble up within a week sometimes. That does mean that it has lost a lot of gas, but it doesn’t mean that its sufficiently oxidized to become stale. It could impact the brewing, but it wont effect the taste as much as if it were several months old for example. I’ve even has a coffee that had no gas after 4 days, which clearly should indicate it isn’t stale. Generally as I’ve preferred lighter and lighter roasts I’ve noticed a severe reduction in the days the gas lasts, but its not directly correlated with the flavor. It is probably a decent indicator though as stale coffee will almost never be gaseous.
