Pressure cooker red beans and rice. Louisiana style.
This has been my go to lately. Cheap, delicious and easy to make.

1lb dried red or kidney beans, washed and sorted 5-1/4 water 1/2 yellow onion, diced 1/2 bell pepper, diced 2 celery stalks, diced 1 tblsp butter 1-2/3 tblsp cajun seasoning 1/4 tsp cayenne pepper, optional 1 bay leaf 1/2 lb andouille sausage, sliced
This recipe is for a instapot style cooker. Set cooker to sear/saute. Add butter. After butter is melted, add onion, bell pepper and celery. Cook thoroughly until vegetables are tender and onions are translucent. Mix in cayenne pepper. Add beans, water and bay leaf. Set cooker to high pressure for 40 minutes. After cook cycle, let pressure cooker sit for 10 minutes before releasing pressure. Open pot and mash beans with a potato masher until desired consistency. Careful not to damage your pot. Remove bay leaf. I usually cook the sausage separately and add at this point. You can add the sausage when the beans and water are added as well if you prefer. You can substitute pretty much any sausage. You can also use salt and pepper to substitute the cajun seasoning. Nix the sausage and use vegetable oil instead of butter for a vegan version.
Edit. No need to soak beans beforehand.
