  1. I started by dicing up jalapeños, a russet potato, and some red onion. I tossed the potatoes in a mix of olive oil, Tony Chachere’s Cajun seasoning, cumin, smoked paprika, and onion powder.

    I let the potatoes fry for a bit in a cast iron skillet and then added the vegetables. After the vegetables went in I shredded meat off of leftover chicken wings I had smoked for dinner last night. The chicken was mixed in to the skillet and everything cooked together while my oven pre heated to 380f (193c).

    As soon as the oven came up to temperature I cracked three eggs on top ( one yolk unfortunately broke open). The skillet cooked in the oven for eight minutes.

    The end result was seasoned well with a slight heat from the jalapeño and a hint of sweet from the bbq sauce on the chicken. Overall it was a good breakfast made up of leftovers in the pantry and refrigerator.
