Had some buddies over last Friday for beers and BBQ. Made some Tri Tip Sandwhiches.
I seasoned a beauty Tri Tip I got from my local butcher with Spicology SPG and Killer Hogs BBQ Rub, cooked it indirect on my Weber Performer with Jealous Devil Lump Charcoal and some Hickory chunks in the sns grills Slow and Sear until it got to an internal temp of 130f. Then I gave it the reverse sear treatment. While that was going on I sauteed Peppers and Onions in cast iron on my Weber Genesis. After resting the Tri Tip for unfortunately not long enough(we were hungry and the beer was taking effect), I assembled the sandwhiches inside. I used some garlic spread, the sliced steak, provalone cheese, the peppers and onions and a great local BBQ sauce, Russel House Sweet Heat. I put them back on the Performer to toast up a bit with Garlic butter on the buns. They turned out amazing. The only thing I would have done different is rest the steak a bit more, but Friday was a little busy. But I heard no complaints. Cheers!!
