    Not meaning to be a dinner downer here, but did you cut the steak like that? If so (and I don’t know how you prefer your steak, but if you like rare/med-rare) I would suggest keeping it whole then slicing it after it’s cooked and rested. I find it very difficult to get perfect steak if it’s pre-cut. By cooking whole you get a much better presentation and it’s much easier to cook to you preference. Anyway, looks good and I like the idea of this combo!
