    Agree that it needs resting longer. But that’s a good sear, and the plating looks really nice.

    Needs resting. Maybe a little over done (grey edges to the sear) but that’s being extra critical and I’d eat it in a heartbeat

    all comments are spot on, that is, you can rest the steak to one side for a couple minutes to allow the juices to run there, and not create the lake on this plate

    still, looks delicious and I’d eat it and go mmmmm, mmmm nomnomnom
