Made using lightly toasted bread layered with Colman’s mustard, a beaten egg mixed with grated cheese, salt and pepper. Baked for 15 minutes on a medium heat and topped with freshly chopped leek.

Tip: A little finely chopped pickled onion mixed in with the cheese works absolute wonders.

I know this may be heresy or some kind of capital high treason but I love this with the cheese sauce made with butter, cream, beer, paprika, a dash of hot pepper sauce, chopped and caramelized red onion, Worcestershire and really fresh ground black pepper with the cheddar cheese melted in of course, over toast and then broiled until bubbly and toasted golden and then eat with piping hot beans poured over and maybe a banger or three and runny egg or two over the top. Now I’m craving it!
