Looks good. I’m Irish so white pudding is very common for me. I can tell from looking at it it’s a bit overcooked. Next time do it on a low heat and turn regularly so you can see its not getting overcooked. It doesn’t need much time on the pan so you’d put it on towards the end, your aiming for a golden colour. Basically what happens is when it goes above a certain temp the fat renders and comes out of it leaving it a bit dry and tastless.

Had it for the first time last month, absolutely hated it. Was strangely chewy and just tasted weird. With pudding, for me, once I went black I could never go back.
