Was craving pizza real bad and cauliflower crust just doesn’t do it for me. Have made this a few times and I’m always happy with the turnout. Super filling and loaded with lean protein and veggies.
You could probably reduce the calories in several areas as well, which I didn’t do. Egg whites could be substituted for the whole eggs and you could use low fat mozzarella (which is very difficult to find in my country, so I used regular). Otherwise, here’s the recipe and calories:
Crust: * 500g chicken breast, ground (550 calories) * 2 eggs (140 calories) * 100g mozzarella cheese, shredded (280 calories) * Salt/pepper/italian seasoning to taste Toppings * 285g pizza sauce (115 calories) * 150g spinach (raw) (34 calories) * 155g onion (raw) (60 calories) * 140g red bell pepper (raw) (35 calories) * 155g tomato (raw) (27 calories) * 135g mozzarella (378 calories) * Salt pepper and Italian seasoning to taste Total: 1620 calories Per slice (1/12): 135 calories Instructions: For crust: * Mix crust ingredients thoroughly. * Spread evenly on a parchment lined baking tray about 1.25cm thick (about 1/2 inch). * Bake at 240° C (465° F – that’s as high as my over goes) for about 20 minutes For toppings: * Chop veggies to desired size and stir fry using a bit of water in the pan instead of oil. Season to taste * Top cooked pizza crust with pizza sauce and cooked veggies. Top with cheese * Place in oven and broil until cheese is melty and browned.

How well does the crust hold up after baking? Is it a pizza you can pick up and eat with your hand, or is this a knife and fork situation?
