Recently got a used WSM and I made my first brisket today! Did hot and fast and took about 6hrs, bought the smallest packer they had at Costco at 10lbs untrimmed.
I’m happy this turned out well. I wish the smoke ring was deeper but the flavor and texture was so good! I’m going to try an overnight cook next time to compare. Bonus smoked Filipino adobo chicken thighs and legs!

I cut it wrong when serving and trimmed it sloppily when prepping but it was so moist and the flavor was amazing! Baby steps for sure!
