Correct me if I’m wrong, but it looks like you mixed the whites from two eggs to make a big white omelette and then the raw yolk from one of those put on top, and the other obviously on the steak?

Try curing a yolk in salt and then using it as seasoning. 10/10. You’ll need to cheese grater it
