    Usual rib prep the a heavy coat of a simple Adobo seasoning.
    Into the bag with a half teaspoon of liquid smoke. Seal and let them sit 4 ish hours to overnight.

    12 hours at 165 then into the ice bath.

    Preheat oven or smoker to 350. Nice coat of the Al Pastor marinade and onto the smoker until hot & tacky.

    Oh and for a nice side use all that pork juice to make some Mexican rice.
