    **INGREDIENTS**

    * 2 large seaweed sheets nori
    * 6 oz smoked salmon
    * 1/2 large cucumber cut into thin strips
    * 1 medium carrot cut into thin strips
    * 1/4 cup cream cheese softened
    * green onions sliced
    * sesame seeds optional
    * soy sauce

    **INSTRUCTIONS**

    1. Wash and slice the cucumber and carrot into thin strips.
    2. Lay a seaweed sheet on a sushi mat with the shiny side down.
    3. Spread the cream cheese across the lower 1/3 of the seaweed horizontally, then add the vegetables and smoked salmon.
    4. Roll the sushi tightly, starting at the bottom and rolling toward the top.
    5. Cut the sushi roll into slices about 1 inch thick.
    6. Garnish with chopped green onions and sesame seeds.
    7. Enjoy!!
